Recipe of the Week...Cranapple Streusel Topped Pie


This delicious fall pie has a wonderful sweet and tart flavor that is perfectly enhanced by the streusel topping. A dollop of vanilla ice cream can be added when serving, if desired. Soooo good!

Ingredients:
  • 3 large apples (peeled, cored and sliced)
  • 2 cups fresh cranberries (washed and drained)
  • 1/8 cup lemon juice
  • 1 1/2 cups sugar
  • 1 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/4 cup corn starch
  • 1 unbaked 9" pastry for pie
Line 9" pie place with pastry and flute edges. In a large mixing bowl, combine the remaining ingredients. Pour into pie plate and top with streusel:

Streusel Ingredients:
  • 1 stick margarine
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
Cut margarine into dry ingredients to form a crumbly mixture, and then spoon mixture onto the top of the pie filling.

Bake pie for 10 minutes in a 450 degree oven. Reduce heat to 350 degrees and bake approximately 50 minutes longer. Serve warm with ice cream, if desired. Refrigerate leftovers.

Frosted Designs Challenge...


The Fabulous Friday Challenge at Frosted Designs this week is to incorporate food or candy into the design. (Either real food, photographs or images of food). I decided to put a different spin on my project by not only using food/candy but by recycling a 26 oz. soup can as the container to hold the goodies! The handle of the candy pail was created using a a piece of a metal coat hanger that I wrapped around a pencil to form curly-q's at the top. I applied Terrifically Tacky Tape to the green cardstock and then attached it to the can. The bolts were attached to the can using JB Weld, a heavy-duty adhesive, to ensure that they wouldn't fall off.

On Monday I delivered this little treat to my dear friend, Linda H., who has been down with a broken leg for the past few weeks. I thought this would be a fun way to brighten her day, and she loved it!

Recipe of the Week...Caramel Apple Dip


MMMMM! Is there anything better than a crisp, juicy apple paired with caramel?? The recipe that I'm sharing with you this week incorporates not only yummy caramel but cream cheese too...I know that it will become one of your favorite snacks as well!

Ingredients:
  • 8 oz. light cream cheese, softened
  • 1/4 cup caramel ice cream topping
  • 1 Tbsp. brown sugar
  • 1 tsp. vanilla extract
  • Chopped nut topping
  • Apple slices
Beat first 4 ingredients together until smooth and creamy. Spoon into a decorative serving dish. Top with chopped nuts. Serve with fresh apple slices. Refrigerate any left over dip.

Enjoy the bountiful fruits of this glorious fall season!!
