Mike's been keeping our little garden patch watered, so we've been lucky enough to harvest tomatoes and cucumbers so far this year. I shared several cucumbers with my best bud Jamie, and used what I had left to make this yummy salad for us. It's a great, cool side dish when paired with grilled chicken so I hope you'll give it a try!
Ingredients:
- 3 large cucumbers, peeled and sliced
- 1/4 cup lite sour cream
- 1/4 cup lite mayo
- 1/4 tsp. onion powder
- 1/4 tsp. garlic powder
- 1 Tbsp. dried parsley
- Salt and fresh ground pepper to taste
Place peeled, sliced cucumbers in a large bowl. Gently stir in other ingredients until well blended and cucumbers are completely coated. Cover and place in refrigerator to chill for at least 2 hours before serving. Enjoy!
