Recipe of the Week...Struesel Topped Peanut Butter Chip Banana Cake

This week I tested a new recipe out on Mike and Justin and, since they both really liked this cake, I thought I'd share the recipe with you! (They're really good sports to be my "guinea pigs" when I'm experimenting with new recipes! I know that they'll ALWAYS give me an honest opinion too - ha! ha!)


Cake Ingredients:
  • 2 cups all purpose flour
  • 1 1/2 cups sugar
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 3 ripe bananas, mashed
  • 1/2 cup buttermilk
  • 1/2 cup margarine
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup peanut butter flavored chips
Method:
Combine all ingredients in a large mixing bowl and beat with an electric mixer until all ingredients are combined. Pour batter into a greased 9" x 13" cake pan. Add struesel topping, (recipe below), and bake at 350 degrees for 30 to 35 minutes or until cake tester comes out clean.

Struesel Topping:
  • 1/2 cup quick oats
  • 1/2 cup brown sugar
  • 1/2 cup chopped pecans
  • 2 Tablespoons flour
  • 2 Tablespoons margarine, softened
Mix ingredients until crumbly. Sprinkle over top of cake before baking.

This cake can be served warm or cold...it's moist and delicious either way! Enjoy!

  1. Looks really delish! I am not a huge fan of PB but I do like banana and PB combos! Hubby is obsessed with PB so I know he will love it! LOL! Don't you just love using family as guniea pigs? I know I do too!!
