Recipe of the Week..."Norwood Taters"

This week's recipe originates from a potato dish I created with my son's friend, David Norwood, in mind. (Thus the name "Norwood Taters"!) A few years back, when Justin was in high school and an active member of our local FFA chapter, one of the FFA banquets that we attended served steak and chicken along with a potato dish that had a hint of rosemary in the flavor. David was seated at the table with us and commented, "These are good taters!", so I decided that I would attempt to re-create them since we all agreed with him! Here's my version of these potatoes, and I think that you'll agree with David..."these are good taters!"


Ingredients:
  • Potatoes, with the peels on, scrubbed and cut into pieces. (Note: You can use new potatoes or Idaho potatoes, whichever is your preference. In the photo above I used about 5 medium sized Idaho potatoes, which is what I had on hand).
  • 3/4 cup of bottled Light Italian Salad Dressing
  • 1 teaspoon dried rosemary, that has been crushed up
  • Grated Parmesan cheese
Method:
Prepare potatoes and toss into a bowl with a lid. Add Italian dressing and rosemary, and cover bowl with lid. Shake so that dressing and rosemary coats all of the potatoes and set in the refrigerator for a few hours to marinate until you're ready to bake them.

Pre-heat oven to 400 degrees. Coat a shallow baking sheet, (I use a jelly roll pan), with non-stick cooking spray. Place potatoes on baking sheet in a single layer and pour any dressing from bowl over the top of them. Sprinkle tops of potatoes with Parmesan cheese and bake for about 25 - 30 minutes or until potatoes are fork tender, stirring potatoes about half-way through the baking time. Enjoy!
