Ingredients:
- Potatoes, with the peels on, scrubbed and cut into pieces. (Note: You can use new potatoes or Idaho potatoes, whichever is your preference. In the photo above I used about 5 medium sized Idaho potatoes, which is what I had on hand).
- 3/4 cup of bottled Light Italian Salad Dressing
- 1 teaspoon dried rosemary, that has been crushed up
- Grated Parmesan cheese
Prepare potatoes and toss into a bowl with a lid. Add Italian dressing and rosemary, and cover bowl with lid. Shake so that dressing and rosemary coats all of the potatoes and set in the refrigerator for a few hours to marinate until you're ready to bake them.
Pre-heat oven to 400 degrees. Coat a shallow baking sheet, (I use a jelly roll pan), with non-stick cooking spray. Place potatoes on baking sheet in a single layer and pour any dressing from bowl over the top of them. Sprinkle tops of potatoes with Parmesan cheese and bake for about 25 - 30 minutes or until potatoes are fork tender, stirring potatoes about half-way through the baking time. Enjoy!
