Recipe of the Week: Berry Topped Buttermilk Pie





This week's recipe is a cool, delicious pie that is really easy to make. It can be served with or without the berries and whipped cream...I just like the little bit of extra flavor and color that these add to the pie.

Ingredients:
  • 1 unbaked pie crust
  • 1 stick melted margarine or butter
  • 1 1/2 cups sugar
  • 1 Tbsp. flour
  • 1 Tbsp. lemon juice
  • 4 eggs
  • 1 cup buttermilk
  • Pinch of nutmeg
  • 1 tsp. vanilla
  • Berries of your choice (I used raspberries, blackberries and blueberries)
  • Whipped topping
Method:
Preheat oven to 350 degrees. Unroll pie crust, place in a 10" pie plate, and flute edges. Melt margarine in a glass measuring cup and set aside. In a large mixing bowl stir together sugar, flour and nutmeg. In a separate bowl beat together eggs, lemon juice, buttermilk, and vanilla. Blend egg mixture into dry ingredients. Gradually add melted margarine, mixing until batter is smooth. Pour into unbaked pie crust and bake on center rack in oven for 45 - 50 minutes, or until knife comes out clean when center of pie is pierced. Allow pie to cool on wire rack before adding whipped topping and fruit to the top of the pie. Refrigerate any leftover portions.

  1. I have never had a buttermilk pie before...actually never heard of it! Seems similar to a sugar cream pie...do you have those there too?

    1. I've never had a sugar cream pie...I'll have to Google a recipe for one and give it a try! :)
