My dear hubby, Mike, makes the MOST INCREDIBLE chocolate chip cookies EVER! He says that the trick to making a great cookie is "to become the cookie" - ha! ha! Seriously, though, he watches over each pan of cookies that he puts into the oven to make sure that they turn a perfect golden brown...he is, without a doubt, the Cookie Man!
Here is his incredible chocolate chip cookie recipe:
Ingredients:
- 1 cup butter
- 1 cup brown sugar
- 2 1/2 cups blended oatmeal (measure oatmeal first, then blend into a fine powder using a food processor)
- 1/2 teaspoon salt
- 12 oz. chocolate chips
- 4 oz. Hershey bar, grated
- 1 cup sugar
- 2 cups flour
- 2 eggs
- 1 1/2 cups chopped pecans
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- 1 teaspoon baking soda
Cream together butter and both sugars. Add eggs and vanilla. In a separate bowl combine flour, oatmeal, salt, baking powder, and baking soda. Gradually add dry ingredients to creamed mixture. Add chocolate chips, grated Hershey bar and nuts. Roll into 1 1/2 inch diameter balls and place 2 inches apart on a cookie sheet. Bake at 375 degrees for about 7 minutes.
Yield: About 5 dozen cookies
Beware!!! These cookies won't last long around your home so you might want to make a double batch!! They are great to wrap up to give as little treats to your friends and neighbors...you'll receive rave reviews too!

I'm going to try these! I'm not positive, but I think that looks like the Nieman Marcus recipe - I know they blend the oatmeal in theirs too! Thanks for sharing.
