Recipe of the Week...Never Fail Pot Roast


I LOVE putting a roast in the crock pot before heading out the door for work in the morning! The reward that I get when I return home is a house that smells sooooo delish and an incredible dinner with minimal effort on my part. All I have left to do is whip up some mashed potatoes and gravy and open/season a can of green beans and my family is ready to sit down to one of my favorite meals of all time!

INGREDIENTS:
  • Eye of Round Roast...size depends on how many you have to feed
  • 1 small can of mushrooms, drained (optional)
  • 1 teaspoon garlic powder
  • 1 package dry onion soup mix
  • Salt and pepper to taste
METHOD:
Unwrap roast and rinse off with water. Place in crock pot. Add mushrooms, garlic powder, salt and pepper.

In a jar with a screw-on lid, place 1/4 to 1/3 cup of water and contents from a package of dry onion soup mix. Shake until combined and pour over roast in crock pot.

Place lid on crock pot and cook on low for about 8 hours. Remove roast from crock pot and place on serving plate. Cover roast with foil and allow to "rest" for 10 minutes before slicing.

Make gravy using meat/onion/mushroom drippings from crockpot by placing those ingredients in a sauce pan and gradually adding enough corn starch to thicken the juices to form gravy. Be sure to stir mixture constantly with a whisk while you're thickening it so that it doesn't clump up...if needed you can add a little water too.

Serve with mashed potatoes and veggie of your choice....soooooo delicious!!!
