Recipe of the Week...Chocolate Oatmeal Cake with Coconut Pecan Frosting

The recipe I'm sharing with you this week was given to me by my friend Jan A. many years ago, and it remains a family favorite to this day!! The cake is so moist and delicious and the frosting melts in your mouth...a wonderful combination of flavors!

Ingredients:
  • 1 cup rolled oats
  • 1 1/2 cup boiling water
  • 1/2 cup (1 stick) margarine
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 cup flour
  • 1/2 cup powdered baking cocoa
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla
Method:

Mix oats and boiling water. Set aside to cool. Cream margarine, sugar, and eggs together. Add oat mixture and remaining ingredients, beating until smooth. Bake in a greased 9" x 13" pan for 35 minutes at 350 degrees. Top with icing recipe below:

Icing:
  • 1 cup powdered sugar
  • 2 cups flaked coconut
  • 2 Tablespoons margarine
  • 1/2 cup milk
  • 1/2 cup pecans
Add ingredients to medium saucepan and boil until thick, about 6 minutes. Pour over cooled cake.

Enjoy!!

  2. BECKY!!! Reading this made my mouth water! Gonna have to wait awhile to make it though--I've cut out all sugar--for at least a month.
